Enzyme preparation with pectolytic and beta-glucanasic activities for enhancing wine’s clarification and filterability.

ZIMAFLOW is an enzyme preparation able to specifically demolish pectins, glucans and polysaccharides totally respecting the characterizable quality of the wine to treat.

ZIMAFLOW finds its use for enhancing filtration performances in the cellar. Used in wines at pre-bottling improves the filterability index facilitating the procedures of final filtration. On dirty wines speeds up the spontaneous clarification. 

These interesting activities take place optimally at the normal temperatures that can be observed in the cellars so the enzyme can, therefore, be used according to appropriate working times (check the following Technical Data Sheet).

Optimal Temperature Range: 5-15C°
