TSP (trisodium phosphate) is a non-chlorinated, highly alkaline cleanser (pH 11.5 – 12.5 at 1% solution). Non-chlorinated TSP is suitable for use on all winery equipment except barrels, and is especially useful for stainless steel, which could be corroded by a chlorinated cleanser. A rinse with citric acid solution is recommended to neutralize the TSP residue, followed by a final cold-water rinse.
