Highly recommended for sparkling wines, this yeast is characterized by very clean, alcohol resistant fermentations that proceed to completion at a steady rate. It is also an excellent choice for the initial stages in a sequential inoculation with Premium Chardonnay. This very strong fermenter can be used in any high stress conditions and is often called “the workhorse” in the winery. This PDM strain is an all-purpose bayanus yeast.
- Fermentation = 10-20 g/hL
