Yeast blend to enhance aromas in white and rosé wine

Combo® XT is a blend of yeast stains specifically selected to synergistically produce thiols and other volatile compounds. Combo® XT is able to ferment in difficult conditions, with tolerance to alcohol content up to 15.5% vol and to low temperature 13°C-30°C. 

Combo® XT is particularly suited for white and rose wines to enhance the expression of tropical fruit notes from thiols from involatile bound forms.

Dose:

  • White and  rosé fermentations = 20 g/hL
